Flakey Buttermilk Biscuits (Homemade or bought)
1 pound pork sausage
2 Tablespoon + 1 teaspoon(s)s all-purpose flour
2 1/2 cups half and half
1 Tablespoon butter
1/8 teaspoon dried thyme
1/8 teaspoon dried crushed rosemary
1/8 teaspoon crushed red pepper flakes
freshly ground black pepper, to taste

250g AP flour
11g Salt
26g Sugar
16g Baking powder
90g Very cold butter (graded and frozen)
163g Whole milk
Biscuits
Preheat oven to 425 deg.
Mix all dry ingredients then cut butter into dry ingredients
Add half of milk, mix. Continue to pour milk until dough is crumbly
Pour all ingredients onto countertop and mix using folding method (Careful not to over mix)
Roll out until a rectangle, until 3/4″, then cut into even squares
Place portioned dough onto baking sheet and bake for 20 mins
Sausage + Gravy
Brown sausage in a large saucepan. Use a paper towel to blot out most of the grease from the pan.
Add flour, butter, and half & half. Cook on medium-low, stirring often, for several minutes until thickened.
Add thyme, rosemary, red pepper flakes and black pepper.
Serve over warm biscuits.
